Hello everyone! I’m back this year for another blog takeover for easy holiday recipes you can make with both your neuro-typical and AWEsome kids! We’re going to kick off the week with a staple to any Thanksgiving table; PUMPKIN PIE! You can find this recipe just about anywhere, but I have a tiny secret ingredient. Garam Masala! Yes, garam masala is typically found in Indian cuisine, but it is ohhhhh soooo delicious with anything fall! I hope you enjoy this recipe as much as I do!
Jen’s 2022 Blog Takeover! Easy Pumpkin Pie
Cuisine: DessertDifficulty: EasyIngredients
1 preprepared pie crust (I usually buy them in the refrigerated section)
1 can of pumpkin puree (15oz)
2 eggs
1 can of condensed milk, sweetened (14oz)
1/4tsp salt
2 tsp pumpkin pie spice
1/2 tsp of garam masala
Directions
- Preheat oven to 375ºF (190ºC). You’ll also want to set out your preprepared pie crust to warm up while you mix the pie filling. Sometimes if it’s too cold, it’ll break as you unroll it.
- Mix all of the ingredients (except preprepared crust) in a bowl until everything is combined and uniform throughout.
- Grab some pam spray and a 9″ pie dish that’s at least 1″ deep. Spray lightly with pam spray. Then use one roll of your preprepared pie dough and unroll it carefully. Place it in the dish and try to center it as best as possible. Gently use your finger to press the dough into the pie dish. If there is extra pie crust hanging over the top of the dish, fold it over the top of itself to sit on top of the pie dish and use a fork to crimp the edge.
- Pour your pie filling into the pie dish over top of the dough. Do not fill more that 3/4’s full as the filling will rise during baking. You should have some filling left over. Bake the pie in the center of the oven for about 55 minutes or until a toothpick inserted into the pie comes out clean. Another handy tip is to jiggle the pie. If it doesn’t move like it would if it were liquid, then it’s done!
- Let cool on a wire rack for about an hour and then transfer to the fridge for at least 3 hours before serving. Enjoy!
