I don’t know why it took me 23+ years to hear about corn casserole, but one gloomy day in Chicago at a friend’s apartment, I tried it and was hooked. It’s SOO easy to make and your AWEsome helper could easily make this with you. I hope you enjoy this super simple recipe!
Easy Corn Casserole Recipe

1 stick melted butter (or 1/2 cup)
1 can creamed corn
1 can sweet kernel corn
1 cup sour cream
1 box Jiffy cornbread mix
OPTIONAL: Shredded cheese mix
Directions
- Preheat oven to 350º.
- Using an 8×8 baking dish (I typically use a glass pyrex dish) mix all ingredients together (except shredded cheese…. although that could be good to mix in too!)
OPTIONAL: Sprinkle shredded cheese on top after mixing. I personally don’t do cheese, but some people love this. - Bake for 35-40 minutes or until top is golden brown.
